Parsnips are a biennial that is usually grown as an annual. They originated in Europe where it grew wild and was used as a sugar source. Parsnips do great in cooler weather and develop their sweet nutty flavor after being exposed to frost and cold weather in the fall. Leave your parsnips in the ground during the first fall frosts but harvest before the ground freezes. You can overwinter parsnips by covering them with mulch and harvest them once the spring weather thaws the ground.

Parsnips need a longer growing season, about 4 months. It is best to start seeds in worked soil and temps between 50° – 85° F. Seeds can be soaked for 12-24 hours before planting in increase germination rates. Keep the soil moist because the seedlings can’t break through the crust. You can add mulch to conserve moisture
