Red Star Premier Blanc Wine Yeast 

This Saccharomyces bayanus strain is a strong fermenter with excellent alcohol tolerance (18%) and will readily ferment grape musts and fruit juices to dryness. Used to avoid sluggish fermentation & to restart stuck ones with remaining residual sugars. Recommended for sparkling wines processed by traditional or Charmat methods.It is very respectful of varietal character and balanced mouthfeel.
