Shishito is a super popular Japanese heirloom pepper! Compact plants produce tons of thin, 3-4 inch, wrinkled peppers with thin skin making them perfect for frying. Most of these peppers have little to no heat, however about one in ten have a nice bit of spiciness to them, so beware.  Most people harvest these peppers green, though they do develop more sweetness and complexity as they ripen to red. This variety is early maturing and really good for shorter season growers. This is one of our personal favorite frying peppers!
